Overnight Oats
I got a big bag of oats from Costco and am going to make some overnight oats. What I like about this recipe is that you learn the technique and then mix and match with whatever you have on hand. I'm mixing in some chia, almond butter, coconut and cinnamon. And you don't need a fancy mason jar to do this. Tupperware is fine and you can make a big batch and take out a little bit for breakfast each day.
Chicken Tinga Burrito Bowl
I love chicken tinga! With some tomatoes, onions and chicken and spices you can do so much with this. What's great about this is you can make a big batch and make little meal-prep bowls to satisfy your lunch cravings. To go the extra fancy mile, I'd skip the Instapot and make in a Dutch oven and use chipotle peppers (dried or from the can) to act as the spice. I'd also add WAY more sliced onions (as is traditional). Check out this recipe from SF's Nopalito if you want to go more authentic. Regardless, make this chicken, make some brown rice, dice up some avocado, throw in some beans and you have a healthy power meal for the week. Heck, you can even throw all of this into a flour tortilla for a burrito or on top of some corn tortilla for a taco.
Gumbo
New Orleans has a rich food culture. I'm sure this recipe isn't up to Louisiana-snuff but it's actually quite easy to make and helps you use up that shrimp and chicken in your freezer. (Side note: why do we not pluralize shrimp => shirmps? Who eats only one?). The recipe calls for something called file (not an affiliate link) to spice things up. Make a big batch, use that same rice you made for the burrito bowls and you now have yourself a satisfying dinner for a few nights this week. You could also try this with polenta too if you want to go the extra fancy route.
