Make leftovers work hard

We did it, guys! We're done with Thanksgiving. Let's focus this week on making those leftovers and extra ingredients into some nourishing, fancy meals.

Tomato Soup

You probably have most of these ingredients in your fridge right now. You can skip the fried mozzarella balls (but why would you?) and make a grilled cheese sandwich to accompany your fancy tomato sop. Enjoy.


Muhamarah Cauliflower

Muhamarah is one of my favorite Arabic meze dips. If you don't have access to Aleppo pepper (which is pretty easy to find nowadays), you can mix 1/2 teaspoon of paprika and 1/4 teaspoon of cayenne. Roasting a whole cauliflower will be your go-to winter dinner party starter.

Turkey Enchiladas with Homemade Flour Tortillas

Yes, I still have some leftover turkey. You finished yours, already? Dang. I'm going to turn the remaining turkey into some red enchiladas with fresh tortillas. Fill yours with veggies, turkey, cilantro and a little crema (or sour yogurt).
