This is one of my favorite things to make because of how versatile it is. Throw on a salad, or with some grains (like farro or freekeh) or eat on it's own. However you spice your bird (I only use salt), crank your oven to 475F > cook your bird for 15-20 mins > lower the heat down to 375F and get the internal temperature of your chicken to 165F.
